Are there any privacy laws protecting a company’s timesheet information when submitting invoices to a customer, who is requesting to see your employee’s timesheets as a component of the invoice?

There is no bar to doing this, if the customer is being billed for employee time. Of course, any personal information other than the name and rate of pay (home address, Social Security number, etc.) should be redacted.
